I am a french fry junkie. Not that I actually eat them that often, but I think about eating them all the time. To fulfill this craving in a healthy way, I whip up a quick batch of roasted potato wedges. They are baked, not fried, and have a sprinkle of good quality sea salt in place of a ton of sodium. These are similar to steak fries, in taste and texture.
1-2 tbsp olive oil
1 tsp Cajun seasoning (optional)
Sea salt and black pepper to taste
Preheat oven to 450 degrees
Cut potatoes into wedges about 3/4 of an inch thick
Toss potato wedges with olive oil and seasonings
Place wedges on their side on a baking sheet covered with parchment paper
Bake for 10 minutes and then flip sides
Bake for another 10 minutes and then check with a fork – fork should easily pierce the potato. If not ready, bake for another 5-10 minutes and check again
Remove from oven when ready and serve hot!
Tips / Notes
Try any seasoning you like on these – curry powder or paste, chili powder, garlic powder, rosemary, basil, etc.
To balance out the starch, I like to serve these on the side of a big salad or a heaping pile of steamed veggies
Any variety of potato works well except baby (or “new”) potatoes – they have a high moisture content which makes them waxy. They do not work well with baking or frying but are great for steaming or boiling. Stick to full-grown taters for the best wedges!
